INGREDIENTS
Spinach & Artichoke Dip
Product Type: Plain Oat Yogurt
Level: Easy
Time: 30 min
Ingredients:
1 cup Plain Oatgurt
½ cup vegan mayo
1 shallot, diced
2 cloves garlic, minced
150 g frozen spinach, thawed
⅔ cup marinated artichoke hearts, roughly chopped
⅔ cup vegan shredded cheese
salt & pepper, to taste
Instructions:
- Preheat the oven to 350F.
- Squeeze out as much of the liquid from the thawed spinach as possible. Set aside.
- To a bowl, add Plain Oatgurt and vegan mayo and stir to combine.
- Add diced shallots, minced garlic, drained spinach, and chopped artichoke hearts. Stir until combined.
- Add salt, pepper, and vegan cheese, saving some for topping, to the dip and stir to combine.
- Transfer dip to an oven safe dish and top with remaining cheese. Bake in the preheated oven for 15-20 minutes or until the cheese is melted.
- Serve warm with some fresh veggies and tortilla chips.
