Easy Roasted Radish Salad with Dill Kefir Dressing

If you ask us what we’re thankful for this year, we’d probably say our health, family, friends, and simple yet delicious recipes ready in 30 minutes or less. 

The holidays are just around the corner, and they really snuck up on us. So, to make your menu planning easier, we’ve created this easy roasted radish and potato side dish with a tangy dill kefir dressing.

Even if you’re not hosting and you’re going to one potluck-style, this is the dish you can put your name down for!

A Roasted Raddish Side Dish Packed With Nutrients 

While radishes may not be the most popular vegetable in everyone’s books, these little round bites burst with nutrients and flavour, especially when you pop them in the oven to roast. Each one is high in vitamin C, fiber, and potassium, which can be great for improving the look of your skin, improving your digestive system, and lowering blood pressure – necessities after a large holiday feast.

And as for kefir, the name comes from a Turkish word that refers to feeling good. Its probiotic properties are stronger than that of yogurt so this salad won’t leave you feeling heavy after you eat.

How to Put it Together

This is one of those recipes that is incredibly super simple to put together. 

First, put the potatoes, shallots, and radishes on a lined baking sheet and toss them with the OATrageously buttery spread, lemon juice, garlic, salt and pepper. Throw it into the oven for 15-20 minutes.

While that’s cooking, combine the rest of the ingredients to make the dressing.

Plate and garnish with a generous amount of parsley!

INGREDIENTS

Roasted Radish Salad with Dill Kefir Dressing

Product Type: Buttery Spread, Plain Oat Yogurt, & Plain Kefir

Level: Easy

Time: 30 min

Ingredients:

8 radishes, halved

8 mini potatoes, halved

4 shallots, halved

2 tbsp OATrageously Buttery Spread

1 tsp lemon juice

½ tsp garlic powder

Pepper, to taste

Salt, to taste

½ cup Plain Kefir

1 tsp dried dill

½ tsp garlic powder

1 tbsp lemon juice

¼ cup Plain Oatgurt

2 tbsp caper, finely chopped

¼  cup parsley, finely chopped

Instructions:

  1. Preheat oven to 425F.
  2. On a lined baking sheet add halved radishes, mini potatoes, and shallots. Top with melted butter spread, lemon juice, garlic powder, salt, and pepper – gently toss to coat. Bake for 15-20 minutes or until the potatoes are fork tender. 
  3. While they bake, make the kefir dressing by combining plain kefir, dried dill, garlic powder, lemon juice, plain oatgurt, chopped capers, salt, and pepper. Whisk to combine. 
  4. Plate your dish by adding the roasted veggies to a shallow bowl, drizzle with dressing, and finish with a generous amount of fresh parsley.
