We were inspired by a traditional German Cucumber Salad that contains cucumber, red onion, mustard, cucumber and yogurt, but we wanted to keep it simple with only 5 ingredients and can be made in under 5 minutes.
Our dairy-free cucumber salad is made with oat yogurt, lemon juice, garlic, dill, sea salt and cucumbers – that’s it.

Here’s how:
INGREDIENTS
1 cucumber
¼ cup Plain Oat Yogurt
1 lemon, juiced
2 garlic cloves, minced
2-3 Tbsp fresh dill, chopped
Sea salt
INSTRUCTIONS
Slice the cucumbers into chunks or rounds. In a separate bowl mix the yogurt, lemon juice, garlic, dill and sea salt. Pour the dressing on the cucumbers, stir and serve. Can be kept chilled for 2-3 days in the fridge.
