How to Make this Chickpea Salad Sandwich in Only a Few Simple Steps
It’s really simple and only takes about 10 minutes to prep – an easy meal when you are low on time, but want to keep it healthy and whole food based!
Steps to prep this Mashed Chickpea Salad:
Step 1 – Drain and rinse your can of chickpeas and then with a fork, mash them up until there are very few whole chickpeas left.
Step 2 – Mix in the rest of the ingredients with the mashed chickpeas – excluding the buttery spread, tomato and lettuce. This is also where you add in the lemon zest and juice.
Step 3 – Toast your bread and spread a generous amount of the OATrageously buttery spread – no amount is too much! Add your favourite toppings, like lettuce and tomato, and you’re set!

INGREDIENTS
Mashed Chickpea Salad Sandwich
Product Type: Plain Oatgurt & OATrageously Buttery Spread

Ingredients:
1 can chickpeas
½ cup Plain Oatgurt
1 tbsp dijon mustard
¼ cup celery, finely chopped
¼ cup red onion, finely chopped
2 tbsp fresh dill, finely chopped
Salt & pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp lemon zest
1 tbsp lemon juice
4 slices bread
2 tbsp OATrageously Buttery Spread
1 tomato, sliced
½ cup shredded lettuce
Instructions:
- Drain and rinse chickpeas, then add to a bowl. With a fork, mash the chickpeas until there are very few whole chickpeas remaining.
- To the mashed chickpeas add Plain Oatgurt, dijon mustard, celery, red onion, fresh dill, salt, pepper, garlic powder, and onion powder – stir to combine. Add lemon zest and juice and mix in. Set aside.
- Toast bread to desired doneness and spread with OATrageously Buttery Spread.
- Top two slices of bread with the mashed chickpea mixture, sliced tomatoes, shredded lettuce, and the remaining slices of bread.
